Recipe of the Month: Winter Veggie Stew
Packed with seasonal Irish vegetables, this hearty stew is warming, nourishing, and entirely plant based.
Ingredients:
1 tbsp olive oil
1 onion, chopped
2 garlic cloves, minced
3 carrots, sliced
2 parsnips, diced
1 small head of cabbage, shredded
1 tin of chopped tomatoes
1 litre vegetable stock
1 tsp dried thyme
1 tsp smoked paprika
Salt and pepper to taste
Instructions:
Heat the olive oil in a large pot over medium heat. Add the onion and garlic, cooking until softened.
Stir in the carrots, parsnips, and cabbage. Cook for 5 minutes, stirring occasionally.
Add the chopped tomatoes, vegetable stock, thyme, and smoked paprika. Bring to a boil, then reduce to a simmer.
Cook for 25–30 minutes, or until the vegetables are tender. Season with salt and pepper to taste.
Serve with crusty wholegrain bread or a sprinkle of fresh parsley.
